Vegan Tzatziki

This recipe is perfect for parties or even just as a snack. You can dip a variety of food items into this dip including a mixture of veggies and greek foods like pita bread. This is very refreshing especially when it's super cold. This is really good for parties leave a plate of veggies and other dipping items out and people can munch on them as they walk by. Then say to themselves "wow this is really good dip." That gives you the satisfaction that you made something people really like. Please leave pictures and comments. Enjoy!!

Prep time: less than 10 minutes

Serves: 4 people


Ingredients:

- 1 cup raw cashews

- ¾ cup water

- 1 tbsp dried dill

- 1 tbsp olive oil

- 1 tbsp lemon juice

- 2 tsp crushed garlic

- 1 cup peeled grated cucumber

- ¼ cup fresh chopped mint

- Sea salt – to taste

- Black pepper – to taste


Instructions:

1. Peel and grate cucumber and chop the mint. Squeeze grated cucumber to remove water. Set aside

2. Place cashews, water, dill, olive oil, lemon juice and garlic into a blender. Blend until smooth

3. Add in grated cucumber and chopped mint and lightly pulse the cucumber and mint are mixed but still chunky

4. Add sea salt and black pepper to taste

5. Pour into a bowl or container to serve add some dried dill and fresh mint on top along with a little bit of grated cucumber.
