One Pan Taco Chicken Pasta

This recipe is an interesting mix of flavours that all work so well together. The taco seasoning gives it flavour while the veggies, chicken and pasta soak it all up. I made this for my family the other night, it was the first time i'd made it and they really liked it. This recipe has enough carbs, protein and nutrients that fill you up and give you energy to go out an accomplish the things you want to do. Enjoy!


Ingredients:

- 2 large boneless chicken breasts – diced

- 2 tbsp taco seasoning

- 1-4 tbsp olive oil

- 2 bell peppers – diced

- 1 sweet onion – diced

- 2 cloves of garlic

- 2 cups of chicken broth

- ½ cup almond milk

- ½ tsp salt

- 1 can diced tomatoes with basil and garlic

- 8oz pasta


Instructions:

1. Heat oil In medium skillet.

2. Sprinkle chicken with 1 tbsp taco seasoning and then add chicken to heated pan, fully cook the chicken

3. Once the chicken is fully cooked remove from pan and cover to keep warm

4. Heat a tbsp of oil in the pan, sprinkle the peppers and onions with 1 tbsp of taco seasoning.

5. Cook the veggies in the heated pan over medium high heat until browned.

6. Add minced garlic continue cooking on low-medium heat for about 2 minutes

7. Empty the veggies onto the same plate as the chicken, cover once again, set aside

8. Add chicken broth, almond milk, diced tomatoes and salt to the pan bring this to a boil.

9. Once at the boiling point add the pasta, cover the pan turn to medium heat and cook for about 10 minutes. Be sure to stir a couple times while the pasta is cooking to ensure the pasta doesn’t stick to the bottom.

10. Once the pasta is cooked add chicken, peppers and onions back into the pan stir with the pasta.

11. On medium heat cook for 2 minutes to heat everything up again.

12. Add some fresh herbs as garnish if you choose and serve
