Mango & Lime Chia Pudding

Chia pudding is a very unique texture, if you don't like chia seeds then this isn't the recipe for you but, if you do like chia seeds then I recommend this recipe. It's fairy filling and yummy. This recipe has a fruity twist from the mango and lime on top which gives it more flavour than the sweeter base of the chia pudding. You can blend any fruits together that you like and add on top to change up the fruity flavour furthering the variety of chia puddings you can make. Prep time: 5 minutes

Chill time: Overnight

Total time: 5 minutes to make, plus overnight in the fridge

Ingredients:

- 2 cups almond milk

- 2 tbsp maple syrup

- 1 tsp vanilla extract

- 1/2 cup chia seeds

- 1 cut up mango

- 1 tsp lime juice


Instructions:

1. In a container of your choice add milk, maple syrup, vanilla and chia seeds. Stir with a fork until well combined

2. Seal your container with a lid and leave In the refrigerator until most of the liquid is soaked into the chia seeds.

3. In a blender add mango and lime juice, if mango is frozen add 1 – 2 cups of water. Blend until well mixed.

4. Take chia mixture out of the fridge and pour mango lime mixture on top of the chia mixture.

5. Set in the fridge until you’re ready to eat it, grab a spoon and enjoy
