This recipe brings back memories from when I would get home from school to the smell of freshly baked chocolate chip cookies that just came out of the oven. Makes: 16 cookies
Ingredients:
- ¼ cup unsweetened applesauce
- ½ coconut oil
- ¼ cup coconut milk
- 2 ¼ cups flour
- 1 tsp baking soda
- 1 ¼ cups brown sugar – lightly packed
- 2 cups chocolate chips
- ½ tsp salt
- 2 tsp vanilla extract
Instructions:
1. Preheat oven to 375 degrees F
2. In a large bowl whisk together coconut oil, brown sugar, vanilla mix until well combined
3. After its all combined add the coconut milk and applesauce whisk until combined; set aside for later
4. In a new bowl combine flour, baking soda and salt whisk until combined
5. Add the dry ingredients to the wet ingreidents and mix unding a wooden spoon, the batter will be very thick
6. Fold in chocolate chips.
7. Scoop 3 tbsp sized dough into your hands, roll into a ball and place onto a lined cookie sheet. Be sure to leave a few inches between each cookie as they spread when they cook.
8. Bake in the oven for 9-10 minutes or until golden brown.
9. After cooked remove from the oven and let cool, once cool place onto a cooling rack, once finally cool enjoy!
