Gingerbread Cookies

This gingerbread recipe can be used to make gingerbread houses or for gingerbread men/shapes. I really like gingerbread so when I became dairy-free this was one of the major disappointments I couldn't have. Then finding a dairy free gingerbread house to decorate was very difficult and expensive so, I decided to make my own. This recipe is sweet with the perfect mixture of spices to give it that gingerbread hint you look for when eating gingerbread. Please leave comments, suggestions and pictures. Enjoy!



Prep time: 20 minutes

Cook time: 15 minutes

Makes: 16 cookies


Ingredients:

- ¼ cup vegan butter

- ½ cup brown sugar

- 1/3 cup molasses

- 1 egg

- ½ tsp vanilla extract

- 2 cups flour

- 1 tsp baking soda

- ¼ tsp salt

- 2 tsp ground ginger

- 2 tsp ground cinnamon

- ¼ tsp allspice

- 1.4 tsp ground cloves


Frosting:

- 1 cup icing sugar

- ½ tsp vanilla extract

- 1 tbsp almond milk


Instructions:

1. Preheat oven to 350 F

2. Add butter and brown sugar to a bowl cream together using an electric mixer

3. Add molasses, vanilla and egg to the same bowl as the butter an brown sugar. Beat again until combined

4. Sift flour into a new bowl add baking soda, salt, ginger,cinnamon, allspice and ground cloves to the bowl, mix well using a wisk or wooden spoon

5. Add the dry ingredients into the wet ingredients mix until thick batter forms.

6. Flour a flat surface as well as your hands, place dough onto the surface and roll into a ball.

7. Roll out the dough util you reach desired thickness, about ¼ inch thick. Dip your cookie cuters in flour and cut your dough

8. Place the cut out cookies onto a baking sheet that has parchement paper

9. Repeat steps 6-8 until you run out of dough or until it gets to dry to use.

10. Place the trays of cookies into the oven for 15 minutes.

11. After 15 minutes remove from oven let cool and serve. This is where you can decorate if you chose too.


Frosting:

12. Add all your ingredients into a bowl and mix them until combined.

13. After all combined place the frosting into a piping bag, cut the tip off and pipe.
