Frosted Sugar Cookies

This recipe is perfect if you want to make a bunch of cookies in a small amount of time and for a large amount of people. You can personalize these cookies by making them any shape you want and decorating them as much or as little as you want. I made them for Christmas time and this was my first time making them. I found them easy and fun to make. If you have kids or even if you like to express your crafty side, invite some friends and family over and decorate these cookies, its lots of fun. Prep time: 30 minutes

Cook time: 10-12 minutes per tray

Total time: 40 minutes

Makes: 6-7 dozen cookies


Ingredients:

- 4 1/2 cups of flour

- 3 tsp baking powder

- 1 1/2 cups margarine - Vegan

- 1 egg

- 1 1/2 cups sugar

- 1 tsp lemon extract

- 1 tsp vanilla extract


Icing ingredients:

- 4 cups icing sugar

- 3 tbsp meringue powder

- 9-10 tbsp room temperature water



Cookie instructions:

1. preheat oven to 350 degrees fahrenheit

2. Add the flour and baking powder into a bowl, whisk until combined

3. In a separate bowl ad margarine, egg and sugar using a hand mixer, mix until light and fluffy

4. Add lemon and vanilla beat again.

5. Slowly add flour mixture to the bowl contains the margarine, egg, sugar, vanilla and lemon, you might need to work the last of the flour using your hands

6. Form the dough into a couple smaller spheres flatten them into 2 inch thick disks.

7. Refrigerate for 1-2 hours.

8. Roll on flat floured surface about 1/4 inch thick

9. Using cookie cutters cut the shapes of your choice.

10. Carefully place the cut out shapes onto a cookies sheet covered with parchment paper.

11. Cook for 10-12 minutes or until golden brown.

12. Take out of the oven and let cool before decorating.


Icing instructions:

1. Add your icing sugar and meringue powder into a bowl mix to combine

2. Using an electric mixer mix on low slowly adding a tablespoon of water until you have the desired texture.

3. Once you have the texture you want this is where you flavour or colour if you want.

4. Put your icing into a piping bag and pipe.
